A Cornwall-based cake designer has scooped a gold award for her unforgettable creation of the Magna Carta from her baking studio in Penzance. Christine Jensen, owner of Peboryon, won first prize in the Decorative Exhibit category at Cake International, Manchester this weekend. Christine painstakingly copied 4,000 medieval Latin words onto fondant, creating a full scale edible version of the Salisbury  Magna Carta to celebrate its 800th anniversary.
 
"An edible Magna Carta was a major creative challenge, but it felt important to celebrate such a remarkable piece of history. It took a lot of time and skill, but the end result was entirely worth the effort," Christine said.
 
Competition judge Alan Shipman, Consultant Chef with 50 years experience, called out Christine's expert workmanship. "I've seen a lot of entries over the years, but this work is quality. To have the level of historical accuracy, down to the pin-holes, is remarkable."
 
Christine took advantage of the 94 hours it took to make her Magna Carta cake by listening to the feature programmes on the BBC, "I'd forgotten how dramatic our history is. I learned so much as I was working towards the competition," she said.
 
Cake International holds the largest cake show in the world, and organizes four shows each year. Christine's Magna Carta cake won Gold and First in Class in the Decorative Cake category. This was not her only award. She also submitted a four tier teal and silver wedding cake decorated with forty white tea-roses to the 'wedding cake' category, gaining her a very respectable Bronze.
 
She can add these awards to her previous national victory at the Cake & Bake Show in Earls Court, London, where she won the professional category with a 1.1m tall tree-house cake inspired by The Swiss Family Robinson.
 
Christine is delighted and surprised with her latest success, "To have experienced professionals judging and commending my work at a national level is really wonderful, but I'm just looking forward to getting back to my studio and making some more amazing cakes!"
