Having observed a growing desire amongst clients to bring their own lust list of classic dishes to the table, the team at Beetham Food has devised a delicious menu inspired by their couples' foodie memories. "Each couple wanted to inject their own personality into the menu using childhood favourites, and almost reinvent classic dishes using local and seasonal ingredients," explains Louisa Beetham. "They still, however, wanted to retain a formal dining experience and have the food presented to the highest of standards."
From the flaky loveliness of Cornish cheese filo tart to the melt-in-the-mouth flavour of marinated leg of lamb, these dishes are unashamedly hearty and oh-so satisfying. The Yorkshire pudding canapes filled with local sausage and onion gravy are the foodie equivalent of a cosy blanket, while chocolate mousse served with strawberries, coulis and clotted cream ice cream makes for a deliciously indulgent pudding. Continuing the comfort food theme, nachos lavished with chilli, fries and utterly moreish toppings will make for a welcome belly-fill to fuel the late night shenanigans.
