STRAWBERRY AND LAVENDER GIN

Ingredients
Litre bottle of gin
Large punnet of strawberries
Three tablespoons of sugar
Eight sprigs of fresh lavender

Method

1.Clean, hull and slice the strawberries and sterilise a large container such as a Kilner jar.

2. Place the strawberries, three tablespoons of sugar and the lavender into a large airtight jar.

3. Fill the jar with gin and stir. Seal it with an airtight lid.

4. Tip and turn the jar daily for three days to agitate the ingredients. After three days, strain off the liquid into a sterilised bottle. Dispose of the fruit etc.

5. To serve, add ice, a sprig of fresh lavender and tonic water or soda water to taste.

EARL GREY, LEMON AND CUCUMBER GIN

Ingredients
Litre bottle of gin
Half a cucumber
Three lemons
Two Earl Grey teabags
A sprig of fresh thyme

Method
1. Clean and slice the cucumber, clean and half the lemons and sterilise a large container such as a Kilner jar.

2. Place the sliced cucumber, halved lemons, teabags and thyme into the jar. Then grate the zest of one lemon into the jar.

3. Fill the jar with gin and stir. Seal it with an airtight lid.

4. Tip and turn the jar daily for three days to agitate the ingredients. After three days, strain off the liquid into a sterilised bottle.

5. To serve, add ice, a slice of cucumber, a slice of lemon and a sprig of rosemary or thyme and tonic water.
